My all time favorite thing to do with BACON:
Chop the bacon, fry it up, remove form pan, drain 3/4 of grease, add olive oil to pan with remaining BACON grease, add a chopped shallot, garlic, red pepper flakes, salt pepper, and cook until the shallot is translucent, add ¼ cup of chopped roma tomatoes , add ¼ cup of red wine I chose VAMPIRE WINE, once cooked down add the bacon back to the pan, add fresh chopped parsley and serve over your favorite pasta!!!!! Hmmmmmm
